Pop the beef and stock into your crockpot and turn it on. Sear the beef first then put it into your crockpot. The soup will be delicious both ways but it has more flavor (and the beef looks a little prettier) if you sear it first. Once the beef is nice and tender (about 30 minutes before you plan on eating it) you add the veggies to the pot. This recipe is a riff on my favorite Crockpot Beef Stew. Compared to my original beef stew, this homemade soup has a few more vegetables and a little less prep.
